Sezza started from our kitchen, at home in Kent — the week a GP said the words "cut down on salt."
We did what everyone does. We cooked the same meals, minus the salt. And every one of them tasted like a photocopy of the real thing.
Here's the thing nobody tells you: salt was never the flavour. It was the shortcut. Real flavour was always the herbs, the spice, the citrus, the char, the sweetness — salt just turned the volume up.
